Boneless Leg of Lamb

Ingredients

  • 2 tbsp. ground cumin
  • 1 tbsp. ground coriander
  • 1 tbsp. chili powder
  • 1 tbsp. garlic powder
  • ½ tsp. cayenne pepper
  • 1 tbsp. kosher salt
  • 1 - 4 ½ lb. leg of lamb, boned

Preparation

Pre-heat oven to 400º F. Combine the cumin, coriander, chili powder, garlic powder cayenne and salt. Rub 4 tbsp. of spice micture over leg, reserve the remaining spice mixture to season to taste. Tie leg with string at 1" intervals. Place leg on a rack in the oven for about 1-1/4 hours or to an internal temperature or 140º F. Lamb can be rubbed with spices up to one day in advance.

Slice the leg of lamb and serve.

Rare 130º - 135º, 20-25 minutes per pound plus 8-10 minutes resting

Medium-Rare 135º - 140º, 25 minutes per pound plus 8-10 minutes resting

Well-Done 150º - 160º, 30 minutes per pound plus 8-10 minutes resting

Meat will continue to cook 8 to 10 degrees while resting.
This allows the juices to redistribute throughout the meat.
