Garlic Pepper Lamb Loin Chop

Ingredients

  • Lamb loin chops (2-3 per person)
  • Seasoning Blend
  • 2 tsp. black pepper, cracked
  • pinch cayenne pepper
  • 2 tsp. garlic, dry, crushed
  • 2 tbsp. parsley, fresh, chopped
  • 1 tsp. salt
  • 3 tbsp. olive oil

Preparation

In a small bowl, prepare seasoning blend.

With paper towel, pat dry chops and roll in seasoning blend. Press mixture firmly into meat. Refrigerate for 30 minutes. Remove from refrigerator, let warm up to room temperature.

Pre-heat grill.

In skillet over medium-high temperature, quickly sear chops in hot olive oil on both sides until light brown.

Remove chops from skillet and place on grill. Grill to desired doneness. Remove from heat and serve.

Rare 130º - 135º, 20-25 minutes per pound plus 8-10 minutes resting

Medium-Rare 135º - 140º, 25 minutes per pound plus 8-10 minutes resting

Well-Done 150º - 160º, 30 minutes per pound plus 8-10 minutes resting

Meat will continue to cook 8 to 10 degrees while resting.
This allows the juices to redistribute throughout the meat.
