Lamb Chops with Garlic and Olive Oil

Ingredients

  • 6 tbsp. olive oil
  • 2 cloves garlic, minced
  • ½ tsp. salt
  • 1/4 tsp. fresh-ground pepper
  • 8 lamb rib chops, about 1 inch thick

Preparation

Light a grill or heat a broiler. In a dish combine 4 tbsp of olive oil with the salt, garlic, and pepper, add the chops and turn to coat. Cook for 5 minutes basting with the remaining oil. Turn and cook for about 5 minutes longer.

Rare 130º - 135º, 20-25 minutes per pound plus 8-10 minutes resting

Medium-Rare 135º - 140º, 25 minutes per pound plus 8-10 minutes resting

Well-Done 150º - 160º, 30 minutes per pound plus 8-10 minutes resting

Meat will continue to cook 8 to 10 degrees while resting.
This allows the juices to redistribute throughout the meat.
