Mustard and Garlic Roasted French Rack

Ingredients

  • 1 head garlic
  • 2 tbsp. country style mustard
  • 1 tbsp. chopped fresh tarragon
  • 1 tbsp. chopped chives
  • 2 tbsp. olive oil
  • 2 racks of lamb

Preparation For Roasted Garlic

Pre-heat oven to 400º F Slice 1/2" off the top of the head of garlic. Wrap in foil and place in oven for 45 minutes or until cloves are soft. Squeeze the softened garlic our of the skins. Reserve 1 tbsp. of softened garlic and save the rest for another use. Combine 1 tbsp. reserved roasted garlic with the mustard, tarragon and chives.

Preparation For Lamb

Heat the olive oil in a sauté pan and sear the racks. Brush with the reserved mustard mixture. Place on a rack in a roasting pan and cook for 30 minutes. Slice each rack into 8 chops. For each serving place four chops on a serving plate.

Rare 130º - 135º, 20-25 minutes per pound plus 8-10 minutes resting

Medium-Rare 135º - 140º, 25 minutes per pound plus 8-10 minutes resting

Well-Done 150º - 160º, 30 minutes per pound plus 8-10 minutes resting

Meat will continue to cook 8 to 10 degrees while resting.
This allows the juices to redistribute throughout the meat.
